This is my recipe for Organic Hot Cross Buns, devised in the THI kitchen especially for our health-conscious readers. There is no denying that Easter can result in one huge blur of chocolate bunnies, food comas and an abundance of alcohol.

However, with this festive recipe you will be able to keep your health in check, whilst feeling like your indulging.

2 cups of organic wholemeal flour
1/4 cup organic rolled oats
1tsp yeast
1 organic egg lightly whisked
1/2 Cup of your preferred organic milk
1tsp organic honey
1tsp vanilla essence or concentrate
1tsp cinnamon
1/4 cup melted organic coconut oil
2TBS organic sultanas
2TBS chopped walnuts
3 rows of dark chocolate melted for crosses

METHOD
1 In a large bowl, sift the flour and combine with the rolled oats, yeast and cinnamon. Warm the milk slightly and add the honey and vanilla essence into milk stirring until honey has melted. Add to the bowl along with the egg.
2 Stir to combine and knead until an elastic dough forms. Cover the bowl with a tea towel and rest for 30-45minutes in a warm dry area
3 Knead dough for around a minute, adding in the sultanas and pecans, then place back to rest for another 30 minutes.
4 Pre-heat the oven to 160 degrees Celsius and line a tray with baking paper. Roll the dough into 8 even round balls and place on baking tray.
5 Lightly brush buns with an egg wash (one egg whisked) and bake in the oven for approx 30 minutes until golden brown.
6 Once cooled, drizzle the melted dark chocolate over buns to form a cross. Allow to cool and store in an airtight container.
7 These HCB taste delicious lightly toasted and spread with a little butter or honey.
