Sydney has long been a foodie city, from brunch by Bondi Beach to rooftop drinks overlooking Circular Quay. In March 2025, it gained a new destination: Hay St Market at Paddy’s, a market-style food hall inspired by the likes of London’s Borough Market, Barcelona’s La Boqueria and Singapore’s Lau Pa Sat.

What you will find
Five years in the making and located in the Market City complex in Haymarket, the precinct brought together 47 traders and more than 25 cuisines at launch. There is a cheesemonger, a fishmonger and even a florist, alongside hawker-style eateries, bakeries and bars.
- Fresh produce and seafood to take home
- Street food and dumplings for a quick bite
- Artisan cheese, pastries and gourmet pantry essentials
- A licensed space for after-work drinks and shared plates

From morning coffee to late-night dinner
Open seven days, the market is designed to work from breakfast through to dinner. Joseph Murray, Group CEO and Managing Director of Doltone Hospitality Group, described it as a place “where tradition meets innovation”, celebrating Sydney’s community spirit and relaxed lifestyle.
For those with fond memories of Paddy’s Markets, it is an evolution rather than a replacement. Sydney Markets has described it as preserving the essence of Paddy’s while creating something fresh for the city.

How to make it a healthy visit
- Shop first, eat second. Pick up seasonal produce and seafood for the week before you settle in.
- Share plates. Ordering a few dishes to share lets you taste more without overdoing it.
- Look for steamed and grilled options. Many Asian and Mediterranean stalls offer fresh, light dishes.
- Walk there. Haymarket is an easy stroll from Central Station and Darling Harbour.
